Abstract

This work will improve the health impact of starches in staple cereal crops to combat the rise of non-communicable diseases (NCDs) in LMICs, where 75% of NCD-related deaths occur. The consumption of cheap, starchy, energy-rich foods in LMICs is underpinning a catastrophic increase in diabetes and obesity. The economic and social costs of these diseases can drain families of resources and drive them into poverty. Enhancing the quality of everyday foods is critical to reduce the diet-related risk factors of NCDs. This work will deliver accessible crop germplasm and associated data resources for developing healthier staple foods in LMICs. Thus, it will improve the sustainable welfare and economic growth in countries where the crops are grown and the processed food consumed. To maximize the future impact of the work we are partnering with research organizations in LMICs and taking into account local food systems and cultures of consumption.
