Abstract
Many foods are processed to low moisture content and are brittle and prone to damage and breakage. Although these materials can be well-characterised mechanically little is known about events at the molecular level during fracture. We will use newly developed mechano-spectroscopic tools together with more established physico-chemical methods to determine biopolymer behaviour in relation to the glass transition and the molecular and microstructural basis of toughness and strength. Deformation mode changes during mechanical testing will be determined in situ and coupled with assessments of microstructure, mobility, molecular interaction, orientation and order. This will provide a rational basis for the design of novel and improved products. (Joint with BBS/B/12733).
