Abstract
No satisfactory model currently exists to explain the relationships between flavour perception and the flavour compounds responsible. This proposal seeks to tackle the problem using a combination of novel flavour analyses (developed at the University of Nottingham) and the sophisticated mathematical and statistical expertise available within Professor Fearn's group at UCL. There are two aims. 1) Verify the hypothesis proposed by Overbosch that the lack of fit between flavour release and flavour perception is due to an adaptation effect. 2) Identify the key factors that relate flavour release with flavour perception using a combination of instrumental and sensory techniques coupled with appropriate data analyses.
