Abstract

Combined optical, AFM and SNOM microscopy will be used to investigate and assay LDL receptor sites expressed on monocyte cell surfaces, to study the behaviour of mixed protein films formed at air-water interfaces, and to study the architecture of the molecular structure of plant cell walls in isolated cell wall fragments, and intact cells, with emphasis on the location of both mobile and immobile molecular components, and the molecular changes which occur during the stretching of layers of epidermal cells. The research addresses high priority research areas in food quality concerned with plant cell wall architecture and in diet and health concerned with fat adsorption and potential links to cardiovascular disease.
