Abstract

We propose to develop the technique of electron energy loss spectroscopy (EELS) for imaging the ions associated with cross- linking of structural polysaccharides in cell walls from food plants, and for direct imaging of the polysaccharides themselves. Preliminary results show that EELS imaging of pectins through bound Ca can be achieved with nanometer resolution. As well as giving valuable information on the structure of the plant cell wall, EELS has great potential for high-resolution imaging of structural components of foods in general.
