Abstract
The initial target of the project is to be able to predict the timescale of the sedimentation process in food emulsions. In particular, we aim to understand the factors controlling the duration of the delay phase before the onset of sedimentation. Our current model is based on the rearrangement of droplets that are held together in a potential well, but able to rotate in the energy minimum. To test the model we need to establish the basic physics of the phase separation process, and develop structural probes to characterise the droplet rearrangements
