Abstract
Scanning probe microscopy (atomic force microscopy and scanning near field optical microscopy) will be applied within multidisciplinary studies directed towards the investigation of complex multi component interfacial films responsible for the stabilisation of foams and emulsions, investigations of the structure and interactions of cell wall biopolymers, and the imaging of receptors on cell surfaces. Methodology will be developed for extending the applications of these techniques in food science.
