Abstract
The project will involve the use of atomic force microscopy to study polysaccharides and polysaccharide interactions with other biopolymers. These studies will be used to characterise the irregular (branched) structure of plant polysaccharides, to study the size and stiffness of polysaccharides responsible for their use as thickening and stabilising agents, to study mechanisms of gelation of polysaccharides and the organisation of polysaccharide architecture in food materials or natural network structures such as plant cell walls.
