Abstract
This project seeks to relate the chemistry and biochemistry of cell wall polymers and their crosslinks with the structure and physical properties of cells, including their separation and breakage and how they contribute to tissue archestructure and mechanical properties. The objective is to develop mechanistic model which relates biochemical, chemical, archestructural and physical properties of plant components to overall mechanical properties of the organ and to test whether the model may be used as the basis of physical texture and its manipulation.
