Abstract

This project concerns risks associated with foodborne pathogens within emerging food chains, particularly those associated with livestock in Tanzania. The project is highly collaborative and includes partners in the UK, Africa and New Zealand. Data collected in Tanzania, which describe beef and poultry production from farming to slaughter and distribution, will be analysed with respect to food poisoning hazards and risks (in particular in relation to salmonella and campylobacter). Risk assessments will be used to develop internal control points and structures. At IFR data will be used to develop a model for attribution of foodborne illness. Results will be used to inform Tanzanian food safety policies, to protect human health and to enhance opportunities for international trade.
