Abstract
Assembly and breakdown of biopolymer networks is a major factor defining food quality. Rational design of biopolymers or processing to improve quality requires a molecular understanding of network assembly and breakdown. There are currently no direct methods for obtaining this information. We will develop and apply probe microscopic methods, together with conventional physical (mainly light scattering, X-ray diffraction, light and electron microscopy) and rheological techniques, to obtain such information in hydrated model and real foods
