Abstract
Molecular transport and dynamics in complex foods. The functional response of complex food structures to processing and storage depends not only on the structure of the component proteins and polysaccharides but also on the distribution and transport of low molecular weight components such as water, solutes and lipids within the biopolymer matrix. It is therefore essential that we develop a quantitative understanding of the effect of the microscopic distribution of water and other small molecules on structure-function relationships of food materials
