Abstract
The intramuscular fat content of ruminant carcasses is important to meat quality but the control of its deposition is poorly understood. A factor of unknown chemical structure which reduces the proliferation of fat cell, but not muscle cell, precursors has been detected in medium conditioned by ovine muscle cultures. If its action was specific to preadipocytes it would be a valuable tool with which to manipulate fat deposition. This project therefore aims to purify the inhibitor, to determine its specificity and its chemical nature. Once the compound's structure is known, antibodies will be raised to simplify its detection and measurement.
