Abstract

Cell walls in fruits and vegetables are strengthened by cross-links between polysaccharide chains, some involving phenolic compounds. These phenolic compounds can be released by the action of esterases. Specific fungal esterases are known to be induced by growth on plant cell wall material. In this project, the isolation and characterisation of compounds solubilised during fungal growth and their ability to induce esterase activity will be investigated. The regulatory region of the gene encoding the major esterase will be sequenced, and studies commenced into the mechanism of regulation of this enzyme.
