Abstract
New science programmes at IFR require the implementation and development of modern organic mass spectrometric techniques. LC/MS/MS and GC/MS/MS are essential in the metabolic studies of labelled organic micro- and macronutrients in humans, and for structural analysis in human, food structure, food quality and safety, protein engineering and microbiological sciences. Tandem mass spectrometry, combined with LC/MS and CE/MS will increase the information content spectra generated by soft ionisation techniques and improve the specificity and speed of isotope ratio measurements. The instrument will be used collaboratively in at least fifteen different research areas at IFR, all of which involve innovative science. Prominent examples of these are: absorption and metabolic studies of isotope-labelled organic micronutrients in humans, including folates and carotenoids; studies of lipid metabolism in humans; qualitative and quantitative analysis of bioactive food glycosides; characterisation of complex oligosaccharides in foods; confirmation of point mutations in peptide antibiotics and their precursors; accurate molecular weight determination of recombinant proteins (including pectinases and pectic lyases); and analysis of phenolics in the diet. The instrument will be also available to other laboratories on the Norwich Research Park (NRP). All the NRP biochemistry/biotechnology and chemistry based laboratories have expressed interest in using the instrument.
