Abstract

The objectives of this proposal are twofold: (i) to develop confocal microscopy as a tool for the study of complex colloidal systems, especially, but not exclusively, of food origin; (ii) to establish confocal microscopy as part of a multidisciplinary centre exploiting a number of complementary imaging and scattering techniques for the study of colloidal systems. The emphasis will be on imaging wet systems with a minimum of sample preparation, and being able to image processes in real time as they occur.
