Abstract

This project requests equipment to continue and expand the ongoing research on the malting and mashing properties of cereals in order to produce wort which will be fermented to produce beer and wash prior to distillation. A large number of research projects will use this equipment which will include the assessment of novel cereal varieties and modified malting and mashing conditions. Also cereals grown under agronomic conditions that traditionally do not produce grain that is easily malted will be studied. In addition, the influence of malting and mashing conditions on beer stability (foam, physical and flavour stability) will continue to be a major project. The equipment will also be employed for teaching Honours and Postgraduate Diploma/MSc Brewing and Distilling students.
