Abstract
To relate the stability properties of a model emulsion containing mixed biopolymers and surfactant to the corresponding phase behaviour of the aqueous biopolymer/biopolymer/solution, and to interpret the thermodynamic and kinetic data in terms of how surfactant affects the biopolymer interactions.
