Abstract

To establish physico-chemical principles that can explain and predict the behaviour of biocatalysts (enzymes and whole cells) in reaction systems composed mainly of organic liquids, or related fluids. Thus to provide a sounder basis for the development and optimisation by industry of processes using such media. Specifically, to study: i) methods for the maintenance of optimal catalyst hydration (through thermodynamic water activity, aw); ii) solvent selection and water effects on binding and kinetic constants for biocatalysts; and iii) the structures of protein and non-protein components of the biocatalyst, in relation to catalytic activity.
