Abstract
Recently developed STM and AFM techniques will be used to image alpha-,gamma-,omega- gliadins, LMW and HMW glutein subunits of wheat, and C-hordein of barley. Subdomains of molecules, individual whole molecules, and self-assembled arrays of molecules will be studies under different solvent conditions in order to discover the specific regions within the molecules that are involved in covalent and non-covalent interactions responsible for the properties of gluten.
