Abstract

We aim to validate a fundamentally based multi-component model for fat crystallisation that has been developed to aid engineering design and optimisation calculations for fat based products. The model can predict the following important quantities as a function of time: solid/liquid ratio, crystal size distribution, fraction of each polymorph and the composition of each phase. The model will be fitted to data from DSC, optical microscopy, dynamic light scattering, NMR, FTIR and X-ray experiments using model systems blended from single triglycerides. The model will allow us to further probe the underlying science of fat crystallization and will also be tested in its ability to predict the behaviour of real fat systems. (Joint with D20451).
