Abstract
We will use three different source types of starch grown under controlled conditions to explore how both external and internal influences affect the formation of growth rings within the starch granule. The influence of the growth ring pattern on granule breakdown during processing will be examined. This underpinning work should serve to direct those involved with plant modification as to how to optimise internal granule structure for subsequent processing under different conditions.
