Abstract
A major engineering problem in the food industry is understanding the growth and inactivation of microorganisms during food processing. Recent developments in microbiology have resulted in predictive models, derived from experiments under isothermal conditions. We propose an interdisciplinary study to extend predictive microbiology into the dynamic conditions of real process plant, to develop (I) new techniques for studying microbial growth in process environments, (ii) new engineering models incorporating predictive microbiological equations, and (iii) new validated equations for microbial growth and inactivation in systems representative of real plant. Results will be published in both the engineering and microbiological literature. (Joint with grant D08114).
