Abstract
The esterases of malting barley will be isolated and characterised and their abilities to deacetylate cell walls and pentosans will be determined. The ability of deacylation to facilitate other degradations of pentosans and cell walls by carbohydrases, and the importance in malting and brewing will be assessed. Relationships will be sought between the malting (endosperm modification) rates of barleys of different varieties, esterase levels and degrees of cell-wall acylation.
