Abstract

Barley is a major UK crop. Our previous work on its raw material quality for malting focused on the structure and composition of the endosperm, and showed that its texture, reflected in binding of the protein matrix with other cell components, is strongly correlated with malting characteristics. This proposal will identify and characterise matrix proteins involved in binding to starch and cell wall fractions, and thus determine the molecular bases of differences between cultivars. The influence of environmental effects will also be examined. Markers for use by plant breeders and maltsters, and targets for grain improvement, whether by conventional breeding or genetic engineering, will be identified. The programme involves collaboration between Durham, IACR-Long Ashton, Pauls Malt Ltd and PBI. (Joint with grant D06391).
