Abstract
This project will characterise and determine the mechanism of action of inhibitors from plants of phenoloxidases, peroxidases and the growth of pathogenic microorganisms. These inhibitors will be used to develop new methods of preventing spoilage, extending shelf life and preserving the nutritional value of good products.
