Abstract
To characterise and, where appropriate, to purify, examples of the glycosyl transferases and hydrolases which bind to defined linkages in order to produce or degrade important structural and storage polymers in plants. To study the effects of substrate and enzyme concentration upon the size and structure of the products of these reactions. To determine the significance of these effects in the regulation of the synthesis of fructans and other complex carbohydrates. To study the synthesis and processing of the enzyme proteins involved.
