Abstract
This project is aimed at developing the advanced measurement methods required for the current and future requirements of IFR s research strategy and underpinning the multidisciplinary nature of our research. We will develop enabling technologies, providing a range of tools to provide new, enhanced or unique insight in food composition, structure, molecular dynamics, function and properties. These techniques include MS, NMR, IR, Microscopy and mechanical testing and require high calibre research and support staff. This project directly addresses the needs of the IFR and NRP user communities at two levels: At one level there is the need for regular and routine service to be provided or for access to be provided to the non-specialist user (e.g. MS, microscopy). At another level, there is the requirement for intellectual input into Institute projects involving metrology staff directly involved in the research teams. Both requirements need the input of specialists in the relevant field, access to state-of-the-art equipment combined with the ability to innovate and develop new methods. This work will be involve the following topics: 1. Improved methods for the analysis of complex multivariate biological systems e.g. authentication, analysis of biofluids, chemometrics in support of nutritional and sensory analysis. 2. New mechanical and microspectroscopic methods for cell walls and plant tissues (food quality) 3. MRI and high power NMR development 4. New mass spectrometric methods for nutritional studies
