Abstract

The objectives of this project are to develop and fully characterise a range of novel CPP preparations. The calcium binding and solubilisation abilities of these CPPs and associated fractions will be determined. Specifically, it is proposed to characterise CPPs and associated fractions with respect to their allergenic potential using a human immunocytotoxicological model and to do determine human IgG, IgA and IgE responses to dietary CPPs. The cytotoxicological potential of CPPs and associated fractions will be determined using a novel tissue culture approach. Clinical trials using human volunteers will be performed to access the efficiency of CPPs in enhancing the bioavailability of dietary minerals such as calcium. The functional properties e.g. sensory, solubility and storage characteristics of the various CPP preparations will be determined. Consumer requirements for innovative functional foods will be continually assessed
