Abstract
The aim of this project is to improve the quality of pectins by microbial production of the enzymes (also using genetically manipulated organisms) and their characterisation and to investigate the fine structure of pectins and their degradation by the enzymes. Improvement of pectin properties for a broad range of applications are expected as well as new types of pectin-based products.
