Abstract
The initial empirical and statistically-based modelling routines have been replaced by models using differential equations based on well-established biological concepts with good mathematical properties, and a much improved error structure. Because the concept is embedded in a general theory of population dynamics we have generalised the model, and now propose introducing new terms to take account of physiological state of the microbes targeting the effects of changes in condition (temperature, pH value, water activity) relevant to food processing. This will overcome difficulties experienced modelling lag times and should give a much more precise representation of the course of microbial growth and death.
