Abstract

Data on micronutrient requirements and bioavailability are critical for deriving dietary guidelines for optimal health. Mechanisms of action at the cellular and tissue level and the functional response(s) to different intakes of micronutrients are not well characterised and absorption and transport is variable, depending on dietary and host-related factors. This project aims to generate information on physiological requirements and bioavailability of micronutrients that are associated with public health problems, including iron (iron deficiency), calcium (bone health), folate (neural tube defects and cardiovascular health), carotenoids and selenium (antioxidants). Stable isotope technology will be developed and used for human studies, in vitro experiments will be performed using human cell lines and, where appropriate, diet-gene interactions will be examined.
