Abstract

Yeasts are microorganisms of proven food microbiological utility in industrial processes ranging from brewing and breadmaking through to bioremediation and pharmaceuticals. They also provide valuable models of eukaryotic cellular organisation. This project aims to improve classification and understanding of known yeasts and to stimulate research on the estimated 90 of yeast species which remain to be discovered. Phylogenetic analyses based on ribosomal RNA sequences will be used both in classification and in probe design to identify, isolate and preserve yeasts from a variety of environments. Full phenotypic characterisation will be carried out using rapid microplate assays. New isolates will be preserved under liquid nitrogen and maintained as part of the UK National Collection of Yeast Cultures (NCYC). NCYC is one of the largest service collections in the world and is ideally placed to ensure proper exploitation and technology transfer. This project will expand the collection and build upon existing NCYC strengths. Improved classification and understanding of yeast biodiversity will facilitate targeted exploitation of the collection e.g. new enzymes, novel members of gene families, species of food microbiological and ecological importance, and innovative model systems for studies of metabolic regulation and genome organisation
