Abstract

The brewing process requires a number of endogenous enzymes in barley to be present at the correct time, such as a- amylase. However there are other enzymes for which the role is not known for germination and malting. The role of xylanases and ferulic acid esterases in brewing will be determined in this project. This TMR Fellowship is a three- year project for Miss Ana Sancho to study for a PhD degree. Contacts with the CSIC in Madrid, Spain, are important in this project to maintain an international perspective on brewing.
