Abstract

There is increasing concern that our ability to detect an important group of food ingredients, the plant proteins, is so poor. Problems relating to economic adulteration, accidental mis classification, contamination (of raw materials, processes and products), and labelling have caused particular problems to the industry, retailers and consumers because of the allergic responses (sometimes fatal) that can be induced by these materials. It is proposed to extend our recent research on the detection of peanut in food (now commercialised as a diagnostic kit) to the development of immunoassays for use by the industry for the detection of other important food ingredients, Brazil nuts, walnuts, hazelnuts, sesame and almonds. We also propose to investigate the possibilities of developing robust immuno-diagnostics for application to catering outlets. Succesful completion of the project will also provide tools for further research to investigate the effects of thermal processing on these proteins.
