Abstract
Complex phenols and tannins form a major part of the diet, but the implications for health are not known. This EU funded project brings together organic chemists, stuctural experts, toxicologists, biochemists, nutritionists and epidemiologists to address this question. The uptake and absorption, interaction with human salivary proteins, antioxidant efficacy and indution of detoxifying enzymes will be examined at IFR.
