Abstract

The project is concerned with the examination of the effects of the molecular mobility of food biopolymers in concentrated systems on functional behaviour related to the quality of food products including stability, mechanical properties, chemical and enzymic reactivity, and ordering/crystallisation behaviour. Mobility in these systems will be probed using diffusion measurements and dielectric spectroscopy to examine the influence of molecular structure and size. In turn these measurements of mobility will be related to kinetic aspects of the functional behaviours identified above, with the aim of enabling the rational manipulation of behaviour through changing molecular structure, interactions, composition and processing.
