Abstract

The overall aim of this project is to improve quality assurance in the dairy industries of Central and Eastern Europe with a view to improving the quality of national dairy products, thereby benefiting local consumers, stimulating national economies and increasing competitiveness in a pan-European context. This aim will be addressed by 4 complementary interacting objectives: 1. to improve understanding at a molecular level of how thermal and proteolytic alteration of milk proteins influences the safety and quality of processed milks and dairy products; 2. to provide knowledge-based means of increasing the efficiency of thermal and proteolytic processing of milk and milk products leading to improved and more consistent quality of end products and reduced risks resulting from the consumption of hypo-allergenic products; 3. to develop analytical methodology for monitoring processing, thus improving quality assurance testing of milk and milk products at the factory level and providing objective means of qualitative standardisation; 4. to provide training for industry in the use of immunoassays for quality assurance.
