Abstract
The aim of this project is to develop and improve soft field imaging methods, particularly electrical capacitance tomography (ECT), in terms of the quality of images and the information that can be extracted from them. This will be accomplished by performing dielectric spectroscopic experiments to better understand the frequency-dependent variation in the dielectric parameters of foods and food components and by modelling the interaction of radio- frequency and microwave radiation with foods. We will also develop and apply novel and innovative methods of image reconstruction. Experimental rigs will be constructed for different scale ranges from micro- to macro- and large body imaging. ECT is a technique with considerable potential for industrial on-line inspection and for underpinning IFR research programmes on food processing and nutrition. The ultimate aim is to develop a new tool to enable the determination of the structure of, and the distribution of components within, foods.
