Abstract

This proposal is for matching funding for a European 6th Framework Integrated Project (TRACE) for the period April 2008 to December 2009. IFR has two major work areas in this phase of the TRACE project: Workpackage (WP1) - Stable isotope analysis will be applied to the geographical origin characterization of beef and chicken samples from two test sites in the UK (the Orkney Isles and Cornwall). These sites have previously been used to study the provenance of honey, cereals and lamb meat within a network of 21 test sites throughout Europe. The ultimate goal of the research is to attempt to develop geo-spatial maps that permit the isotopic and trace element composition of a food commodity to be predicted and used by enforcement authorities for food quality and labelling control. Workpackage (WP2) - The use of Nuclear Magnetic Resonance and Liquid Chromatography coupled to Mass Spectrometry to characterise metabolite profiles in chicken as indicators of geographical origin. About 400 samples, previously collected in TRACE, are available from Europe, China, Thailand and S.America are available to validate a metabolomic technique.
