Abstract
Prebiotics have been shown to be important for the maintenance of gastrointestinal health. To date, fructans, mainly from chicory, demonstrate prebiotic activity. The possibility of other classes and sources of fructans providing improved prebiotics will be investigated in this project. Aberystwyth University with expertise in the area of fructan biology, carried out a pilot study with the Institute of Food Research and showed that a novel fructan fraction had a prebiotic index markedly higher than a standard commercial product. A process was developed capable of large scale scale-up for the purification of this component. In this project the prebiotic activity of this fraction will be further characterized with individual microorganisms currently used in products in the animal and human health fields. Development of symbiotic products using proprietary strains will also be examined.
