Abstract

Isothiocyanates are a well-studied group of phytochemicals that are present at high levels in cruciferous vegetables. They have a wide range of functions which enable them to exert anti-inflammatory and anti-cancer effects. Chronic diseases such as cancer, type 2 diabetes and cardiovascular disease are often linked to obesity and diet. The main aim of this project is to investigate the signalling pathways and mechanisms by which this group of phytochemicals may be able to affect the risk and development of these diseases. This will be via a number of experimental designs and methods, using in vitro cell culture and ex vivo models to look at the effects of treatments on inflammatory biomarkers, in particular, Interleukin-6, using ELISA techniques, while the mechanistic details will be investigated using flow cytometry. In addition, an in vivo study in a mouse model of diet-induced obesity will be used to look at how dietary intervention with this group of compounds can affect its inflammatory status, and subsequent development of disease.
