Abstract
Apples are a relatively rich dietary source of polyphenols. These polyphenols exhibit activities that are consistent with them contributing to the health benefits associated with diets rich in fruits and vegetables. Apples contain a mixture of polyphenols including quercetin, chlorogenic acid, phloretin and catechins, all of which have been demonstrated to improve biomarkers associated with age-related diseases such as cancers and cardiovascular disease. There is enormous variation between apple varieties in both the content and profile of polyphenols. In previous studies we have shown that a number of apple varieties that are not the most commonly consumed are a particularly rich source of polyphenols. In this project, polyphenol-rich apples will be subjected to industrial extraction processes in order to optimise the extraction of the polyphenols and provide a stable extract. We will quantify the different polyphenols in the extracts using a combination of spectrophotometric, high performance liquid chromatography (HPLC) and HPLC-mass spectrometry (HPLC-MS) methods that also provide information on the structural identity of the compounds.
