Abstract
The aim is to establish profiling methods for analysis of plants and bacteria (metabolomics) and for authentication of foods. In the first case the methods will be used to determine the effects of controlled genetic and/or environmental influences on metabolite composition. The methods should be non-targeted (in terms of classes of chemical compound) and comprehensive as well as being as high throughput as possible. Advanced data mining procedures are required to generate hypotheses from the data (link to 4231770A). This is a continuation of previous projects in which protocols have been developed for high resolution NMR. The immediate aims are to extend and validate LC/MS protocols for secondary metabolites and to establish similar protocols mainly for primary metabolites using GC/MS. The methods are being developed using material from GM and control potato tubers. In authentication the emphasis will be on the use of isotope ratio mass spectrometry to establish novel biomarkers for the geographical origin of foods (e.g. to measure strontium isotope ratios in olive oil as an indicator of origin) and to use natural isotope fractionation of minerals in foods as an indicator of production methods e.g. zinc isotopes in cattle and poultry in relation to feeding regime
