Abstract
This project aims to develop a holistic model of human digestion in the gastric and duodenal environments for use with foods as eaten. The model will the be applied to fresh, processed, supplemented, novel and functional foods to determine the factors of influence to nutrient bioaccessibility and how they can be optimised within the European diet. The model will be validated against human ileostomy and gastric/duodenal aspiration experiments to provide a cost-effective but relevant tool for determining bioaccessibility of major nutrients and micro components as well as non-beneficial food ingredients such as allergens
