Abstract

The aim of the project is to investigate the extent to which the origin of food-related substances, including their biological origin, may be reflected in their content and distribution of naturally-occurring isotopes. This relates to the safety and authenticity of substances that may be used in foods, or even of entire foodstuffs. Compounds will be extracted from microbiological fermentations and also from plants manipulated to express novel biosynthetic pathways to determine the influence of biosynthetic route on isotopic characteristics.
