Abstract
The aim of this project is to combine the powerful technique of molecular fingerprinting with software capable of establishing associations between patterns and then relating these associations to phenotypic traits. This will give rise to a predictive spoilage index and improve the general understanding of yeast and mould spoilage. Short and long term commercial benefits would therefore follow for the food industry.
