Abstract

The objectives of this EU funded project are: 1.To measure perception, demand for and actual purchase of typical food products by European consumers and determination of the most salient aspects (e.g. sensory characters, labelling, feelings about safety) that motivate consumers¿ preferences for typical food products from their own and from other EU countries. 2. To identify intrinsic (sensory, physico-chemical) properties of typical food products by comparison with non-typical ones and to translate these into well-defined, measurable typicality parameters that can be related to the food chain process. 3. To provide guidelines for European food supply chain and quality policy makers to produce and authenticate typical food products as well as to meet consumers¿ expectations. Two categories of food products (dry-cured ham, red wine) regarded as typical and under Designation of Origin (DO) within the EU have been selected as experimental models. For each product category, DOs from different EU countries will be tested. IFR leads the third work package in which analytical methods (chemical and physical) will be developed. The selected food products will be analysed and the physico-chemical data related to sensory data. The typicality markers established will then be interpreted in terms of food origin and process.
