Abstract

Details should only be considered in the context of PU information. To develop monoclonal antibodies to wheat gluten proteins for use in test kits for plant breeders and grain processors. Antibodies are being raised against total gliadins, total glutenins, individual gliadins and glutenin subunits and synthetic peptides based on their amino acid sequences. The antibodies are being characterized by western blotting and ELISA assays and will be used to determine total gluten in wheats and specific proteins associated with different quality parameters, for example, for making bread, cakes and biscuits and novel end uses such as extrusion and texturing. The antibodies will also be used to determine the effects of climate and nutrition on gluten content and quality, and to examine patterns of deposition during development. The project is strongly collaborative with IFR, Norwich Laboratory, and industrial partners. It is currently supported by DTI under the Agrofood Quality LINK scheme, but forms part of a larger team project in the BBSRC Directorate Strategy area 'Raw Material Quality'.
