Abstract
Plant seeds are widely exploited in the food industry and as raw material for other industries. Many of these uses exploit the major seed storage reserves which are mainly proteins, starch and triacylglycerols. These components may confer specific functional properties, for example, the visco-elastic properties of wheat gluten proteins. This project aims to identify and characterise novel seed proteins which have functional properties of value to the food or personal care (cosmetic) industries (e.g. foaming, emulsification) or biological properties which are relevant to crop protection or biomedical applications.
